Ingredients.

1 cup. sugar
2 eggs, beaten
2/3 cup. vegetable oil
3/4 cup. crushed pineapple
1 tsp. baking powder
1 cup. carrot, grated
1/2 tsp. vanilla
1 1/2 cup. flour
1/2 tsp. salt
1 tsp. soda
1/2 tsp. cinnamon

Directions.

Combine sugar, oil and eggs,Stir in carrot and pineapple, Add remaining ingredients and mix well. Pour into greased muffin tin and Bake at 375 for 15-18 minutes.
