Ingredients.

2 quarts of vegetable oil for frying
2 cups all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon ground nutmeg
1 teaspoon salt
2 eggs
1 cup milk
4 large baking apples, peeled and cored, and sliced into 1/2-inch rings
Confectioners' sugar for dusting

Directions.

1 Fill deep fryer bowl to MAXI with oil. Preheat fryer to 374 degrees F or to when the red temperature-ready light turns off.

2 In a medium-sized mixing bowl, beat together the flour, sugar, baking powder, nutmeg and salt. In a separate bowl, beat together eggs and milk. Stir milk mixture into flour mixture until smooth.

3 Dip apple slices in batter. With frying basket in the down position, drop battered covered apple rings batter into the hot oil, three to four at a time. Do not over crowd. Close lid. Deep fry 2 to 2 1/2 minutes, or until golden brown. Turn over and cook an additional minute.

4 Raise basket. Open lid. Remove apple fritters. Drain on paper towels. Can be kept warm and crisp in a 200 degree F oven for up to 30 minutes. Dust with confectioners’ sugar before serving.

Makes about 24 fritters.
