1 Tbsp onion powder

1 beer(or enough to get it to the right consistency, thin pancake batter is what you're looking for).

I tried another way to eat sunfish fillets. I poached the fish until they were flaking apart. Then I cooled the meat. Added Mayo, shredded parmesan, black pepper, lemon pepper, and some Cajun seasoning. Mixed that all together and wrapped it in a tomato basil flour tortilla with some lettuce and pickle slices. It was good. Will be better next time when I use some mayo which is not fat free.]]></description>

Fillet your catch the way you like them 



Take equal parts of yellow corn meal and PARMESIAN CHEESE! 



Add a Tablespoon of Dill Weed (freeze-dried or fresh) 



Salt and Pepper to taste 



Mix the above according to how much you'll need to cover your fillets. 



Heat your frying oil to at least 375 degrees, drop those bad boys in, and 



let'em fry till brown. Take'em out and squeeze some fresh lemon on them!
