<br />
1 lemon, zest of (lime, orange, grapefruit or any cirtus you desire)

1 teaspoon fresh ginger

Place honey in a double boiler with hot water in bottom.

Add lemon zest and ginger.

Bring water to a boil, and bring mixture to 185°F and keep at 185°F for 10 minutes.

1 3/4 cups sugar 

1 1/2 cups cider vinegar 

3/4 cup water 

1 cinnamon stick 

2 pints blueberries, washed and picked over 





Tie pickling spice ia a double-thickness cheesecloth bag. Stir together spice bag, sugar, vinegar, water and cinnamon stick in a large nonaluminum saucepan. Simmer, uncovered, 20 minutes.

10 cups zucchini 

3 cups onions 

4 red bell peppers 

5 tablespoons salt 

MIX 

3 cups sugar 

1 tablespoon cornstarch 

1 teaspoon turmeric 

3 cups vinegar 

1 teaspoon dry mustard 

1 teaspoon coarse black pepper 

1 teaspoon celery seeds 





SOAK. 

Grate zucchini in food processor, along with onion and bell peppers.

1 gal. cold water 

1 c. salt 

1 Tbsp. alum 



Syrup: 

1 pt. vinegar 

1 pt. water 

6 c. sugar 

1 stick cinnamon 

1 Tbsp. whole allspice 

1 Tbsp. celery seed 

1 Tbsp. whole cloves 

Slice thin pickles. 

Make brine of water and salt. 

Let stand 3 to 4 days. 

Drain; wash pickles 4 or 5 times in cold water. Be sure to wash off all salt or they won't be crisp. 

Take alum and enough water to cover and boil for 10 minutes.

2 sticks cinnamon 

2 tablespoons whole cloves, heads removed 

3 pints brandy 



peel fruit, keep WHOLE 

tie spices in a cloth bag 

boil sugar and water with spice bag, in LARGE pot 

when syrup is clear, add peaches 

cook until tender, but not soft

Stuff peppers and green tomatoes in sterilized jars 

1 gallon vinegar 

1 gallon water 

3 handfuls salt 

6 cups white sugar 

1/2 box pickle spice 



Bring to boil and pour over peppers and tomatoes 

Seal jars tight 



NOTE: 

If any syrup is left you may save it and bring it back to boil and use it again. 

Recipe may be halved or quartered Makes: approximately 16 quarts </description>

Drop potatoes into syrup

Put into one quart fruit jar: 

4 tablespoons sugar 

2 tablespoons salt 

2 tablespoons ground mustard 



Wash cucumbers and pack as many as possible into jar. 

Cucumbers should not be more than four inches long. 

Then fill up jar with cold vinegar. 

Screw jar air tight. 

After Six weeks they are ready for the table and are dilicious. 

These will keep several years if kept in a cool place. </description>

Mix well and add 1/4 cup of salt. 



Cover and let stand 3 hours 





(omitting turmeric if preferred) 

2 cups brown sugar 

1/2 teaspoon turmeric 

1/4 teaspoon ground cloves 

1 tablespoons mustard seed 

1/2 teaspoon celery seed or more 

2 cups mild cider vinegar 



Bring slowly to boiling point and boil 5 minutes
