Ingredients. 



3/4 cup sugar 

1/4 cup unsweetened applesauce 

1/2 cup egg substitute or 2 whole egg, omega 3 enriched preferred 

1 can (15-oz. can) no salt added pinto beans, drain and mash 

1 medium granny smith apple, diced 

1/2 cup dried cranberries/craisins 

1/4 cup skim milk 

2 tsp. vanilla 

1 &#8531; cups flour 

1 tsp. baking soda 

1/4 tsp. allspice 

2 tsp. cinnamon 

1/2 tsp. ground cloves 



Pre-heat oven to 375°F.

Ingredients. 



1 pint strawberries 

2 tsp. sugar 

1 1/2 tsp. balsamic vinegar 



Wash berries, remove hulls, slice and place in glass bowl. Sprinkle on sugar and let sit for 2 hours. Berries may be prepared up to 24 hours in advance. Just before serving, add balsamic vinegar, stir and serve immediately. 



Yield: 2 servings 



This goes great on a small scoop of low fat ice cream, along with slivered almonds and a drizzle of chocolate sauce
