By Bernie

Got some wine going. My Wife wanted some white wine so I got 12 gallons of that in the primary fermatation state. Then I transferred that to the carboys and set 12 gallons of red wine today. After that I looked at the equipment and decided that we can do 12 more gallons of red so I ordered the supplies.

So that will be 36 gallons of beautiful wine just working away in about another week. Each 6 gallons should make 28-30 bottles so go figure.

We are completely out ...

By Bernie

This old man is kind of tired right now as I finally bottled some wine. I set the must 10-02-07 and did the racking when it was required. It has set under air lock for a long time so I was not concerened about it. Finally today I have it in the bottle. Tomorrow I will put the capsules on the bottles.

All that sounds simple until you hear how much. 87 bottles of wine and all Merlot. It tastes very good and Alicia likes it. I would like a little more tart taste but this ...

Here is my latest batch. It is 18 gallons of Merlot. The wine is ready for bottling as soon as we get around to it. Should bottle up at 75 bottles. The batches that I made last year amounted to 29 gallons but all of that stuff is long gone thanks to friends and neighbors.

Bernie has been making home made wine off and on since the middle 60's. Have made many kinds over the years but I think red wine from grapes is the best way to go.

Cheers!
