take 1 full venison back strap and cut 3/4 way through the long way.
fill with your choice of fixings
onions, peppers, mushrooms, chopped garlic, or anything you want.
take strips of bacon or my personal favorite venison bacon and rap around the back strap to close the herbs inside and attach them with a couple of toothpicks or skewers.
cut the back strap into chunks in between the bacon.
add your favorite bbq sauce, steak sauce, or marinade all over the top and sides of the chunks.
grill until they are to your desired doneness.
if its too cold to grill them they also bake pretty easy at 375 for about 45 minutes and they are cooked all the way through and still taste great!!!
one strap feeds about 4 or so but im a big boy and can eat the whole mess in about 2 sittings im pretty greedy about my venison.
