2 lbs. alligator tail, cubed into 1 1/2 inch squares
cooing oil
2 eggs, beaten
1 tsp. lemon juice
1 tsp. salt
1 cup flour
1/2 tsp. baking powder

Pour about 2 inches of oil into a deep fryer or skillet. Heat to about 375 degrees F.

Make a batter using 2 beaten eggs, lemon juice, salt, and flour. Add more flour if more thickness is desired. Add the baking powder and beat until smooth.

Dip the alligator bits into the batter and fry until golden brown. Drain on paper towels.

Serve with a good sweet and sour sauce for a tasty treat!
