Ingredients.
1 1/2 cups sifted flour
1/2 tsp. salt
1/2 tsp. baking soda
1 tsp. sugar
1 egg, beaten
1 1/2 cups buttermilk
2 Tbls. melted shortening
Sift dry ingredients together.
Combine egg, buttermilk and melted shortening. Add gradually to dry mixture, stirring constantly.
Drop batter by Tablespoon Full (I use a Mellon scoop) onto a hot griddle or grill. Cook slowly until the tops are full of tiny bubbles and the undersides have browned.
Turn each pancake over and brown remaining side.
Serve with your favorite syrup, honey or fruit jam or jelly.
