Ingredients.
400 g. lean ground beef
400 g. lean ground pork
150 g. chopped onions
60 g. chopped celery
25ml. vegetable oil
In fry-pan, brown meat, then vegetables in oil, drain any liquid very well.
5 ml. salt
5 ml. pepper
8 ml. sage
1 ml. ground cloves
2 ml. glarlic cloves (minced)
200 g. mashed potatoes
In bowl, add salt, pepper, sage, cloves, garlic and potato to meat mixture mix well.
2 pastry for double crust pies (1 L. pies)
30 ml. fine, dry bread crumbs
250 g. Canadian old Cheddar cheese (grated)
1 egg white
Line 2 pie plates with pastry. Sprinkle 15 ml. bread crumbs into base of each pastry-lined plate. For each pie, add 350 g. filling mixture, sprinkle with 125 g. cheese and top with 150 g. filling mixture, creating layered effect. Cover with top crust, seal by brushing with egg white, flute and prick top to vent steam. Bake in preheated 220 degree oven, for 30 minutes, or until golden brown. To serve cut each tourtiere into 6 servings.
