8 cup. carrots, sliced
3 cup. bread crumbs
2 cup. cheddar cheese,shredded
2 egg whites
1 cup. cornflakes,crushed (3cups befor crushed)
salt to taste
pepper to taste nutmeg to taste
Steam carrots for 10 mins, or untill soft.Drain and mash well.Add bread crumbs, cheese and seasonings. Beat egg whites until soft, fold into carrot mixture.Shape mixture.Shape mixture into 24 (2 inch) long rolls.Roll in crushed cornflakes.Place on greased baking sheet.Bake at 350 for 20 mins or until brown. Garnish with parsley and serve.
