Ingredients.
1 (10 1/2 oz.) carton firm, silken tofu
1 pkg. instant pistachio pudding mix
1 (20 oz.) can unsweetened crushed pineapple, drained
1/2 tsp. coconut extract
Blend tofu in food processor until very smooth. Add pineapple, coconut extract and pudding mix. Blend. Place in dishes and chill at least 2 hours.
