4 tbsp. butter
2 tbsp. flour
1 tsp. salt
1 cup. grated cheese
2 cup. carnation evaporated milk
2 1/2 cup. fresh cod, cook & cooled
In a bowl add melted butter and flour. Season with salt and pepper to taste. Mix until a paste forms. Combine paste with milk in a saucepan, and bring to a slow boil (until mixture thickens),stir constantly. In a greased 2 quart casserole dish, cover the bottom with the milk sauces. Add a layer of cooked cod and then sprinkle with grated cheese. Continue with these layers until all ingredients are used up. The top layer should be cheese. Bake at 350 degrees (F.) until brown, approximately 30 minutes.
