Ingredients.

2 cups all-purpose flour
1/4 cup packed brown sugar
1 Tbsp baking powder
1/4 Tbsp salt
4 Tbsp cold margarine or butter,cut into pieces
1 cup blueberries
2/3 cup heavy or whipping cream
1 large egg
1/2 Tbsp finely grated lemon peel

Directions.

1. Preheat oven to 375F.Into large bowl,combine flour,brown sugar,baking powder,and salt, stir until combined.With pastry blender or 2 knives used scissor-fashion,cut in margarine until mixture resembles coarse.Add blueberries and toss to mix.

2. In small bowl,with fork,mix cream,egg,and lemon peel until blended.Slowly pour cream mixture into dry ingredients and stir with rubber spatula just until a soft dough forms.

3. With lightly floured hand,knead dough in bowl just until it comes together,about 3 to 4 times,do not over mix.Divide dough in half.On lightly floured surface,shape each half into a 6-inch round.With floured knife,cut each round into 6 wedges.Transfer wedges to un-greased large cookie sheet.

4. Bake scones,until golden brown, 22 to 25 minutes.Serve warm, or cool on wire rack to serve later.Reheat before serving, if desired.Makes 12 scones.
