Ingredients.
2 slices bacon, chopped
1 clove garlic, peeled, crushed
1 lb. green beans, ends trimmed
1/2 cup. water or chicken broth
1 tsp. sugar
salt and pepper to taste
Cook bacon in wok over moderate heat until crisp. Remove and drain on paper towel. Pour off all but 1 tbsp. bacon fat. Turn heat to high. Add garlic and stir against sides of wok until lightly browned. Remove and discard garlic. Add beans to wok and stir-fry about 1 minute. Add water to broth. Cover and simmer for 10 minutes, until beans are slightly crisp. Add sugar and stir-fry, uncovered, until liquid has evaporated. Stir in crumbled bacon. Season with salt and pepper to taste. Makes 4 servings.
