Ingredients.
2 (8 ounce) packages cream cheese, cut into 1-inch cubes
2 large eggs
1 tablespoon lemon juice
1 teaspoon vanilla extract
3/4 cup sugar
18 vanilla wafer cookies
Your favorite fruit preserves
Directions.
Line two cupcake tins with paper liners. Place a cookie in the center of each liner. Place the cream cheese, eggs, lemon juice, vanilla extract, and sugar in the blender jar or food processor bowl. Cover and process until well blended and light.
Spoon an equal amount of the cream cheese mixture on top of the cookies. Bake in a 375 degrees F preheated oven 15 to 20 minutes, or until set. Remove and cool to room temperature.
Top with a spoonful of jam. Chill in the refrigerator at least two hours before serving.
