Ingredients.
2 large eggs, lightly beaten
1/2 cup sugar
2 tablespoons softened butter
2 tablespoons grated orange
rind
2 cups sifted all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup orange juice
Granulated sugar for rolling
Directions.
1 Fill deep fryer bowl to MAXI with oil. Preheat fryer to 374 degrees F or to when the red temperature-ready light turns off.
2 In a medium-sized mixing bowl, beat together the eggs, sugar, butter, and grated orange rind. Set aside. Sift together the flour, baking powder, and salt. Alternately add the flour mixture to the beaten egg mixture along with orange juice. Don’t over mix.
3 With frying basket in the down position, drop batter into the hot oil by rounded tablespoonfuls. Make no more than 6 or 8 doughnuts at a time. Close lid. Deep fry 2 to 2 1/2 minutes, or until golden brown. Turn over and cook an additional minute.
4 Raise basket. Open lid. Remove doughnuts. Drain on paper towels. Can be kept warm and crisp in a 200 degree F oven for up to 30 minutes. Roll in sugar before serving.
Tip: So that the batter easily slips off the spoon, periodically dip the tablespoon into the hot oil. Vary It: Replace grated orange rind with 3/4 teaspoon grated nutmeg and orange juice with 1/2 cup sour milk (1/2 cup whole milk mixed with 1/2 teaspoon cider or white vinegar; let sit 1 minute before using).
