20 lb. ground beef
9 cans pork and beans, undrained (16 oz)
9 cans kidney beans, drained and rinsed (16 oz)
9 cans diced tomatoes with liquid (28 oz)
9 cans tomato sauce (28 oz)
3 lbs. onions. finely chopped
7 1/2 c. finely chopped celery, with leaves
9 large green peppers, finely chopped
9 bay leaves
2 Tbsp. salt (or to taste, canned items are salty)
5 Tbsp. chili powder, or more to taste
1 Tbsp. paprika
1 Tbsp. pepper
1 Tbsp. cumin
1 Tbsp. cayene pepper, or to taste
Brown and drain the ground beef. Divide up between pots or roasters.
Mix spices and divide evenly, divide canned goods and vegetable evenly among pots. Cook slowly for 2 hrs. Remove bay leaves before serving.
Makes 18 qts. About 70 servings of 1 c. each
