Ingredients.

1 cup sugar
4 tablespoons cornstarch
8 ounces semi-sweet chocolate chips (two-thirds of a 12-ounce package)
2 2/3 cups whole milk
2 large egg yolks
2 tablespoons unsalted butter
1/2 teaspoon vanilla
Salt


Directions.

1) In a medium non-stick saucepan whisk together sugar, cornstarch, and a pinch salt.

2) Add the chocolate to the sugar mixture.

3) In a bowl whisk together milk and egg yolks and gradually stir into chocolate mixture and bring mixture just to a boil over moderate heat, whisking constantly, and boil 1 minute, whisking.

4) Remove pan from heat and whisk in butter and vanilla.

5) Divide pudding between four 8-ounce ramekins or small bowls. Chill puddings in refrigerator, at least one hour before serving.

Makes 4 servings.
