Ingredients
20 cups eggs, beaten 1 cup fresh chopped fine onions Salt and pepper to taste 10 cups tomatoes, chopped and seeded 80 slices turkey bacon, cooked 40 ounces mozzarella cheese, shredded
Instructions
Blend eggs with onions chopped fine and salt and pepper. Cover and hold for service in the refrigerator.
For each omelet, pour 4 ounces of egg mix into a 6-inch nonstick pan. Cook over medium heat until bottom of omelet is set and lightly browned.
Place 1/4 cup of chopped tomatoes on one half of omelet. Top with 2 slices of turkey bacon (folded to fit) and one ounce of cheese.
Broil to melt cheese. Fold omelet over to enclose filling. Serve immediately.
