Ingredients.
1 small banana, thinly sliced
8 single-serving graham cracker tart shells
1 1/2 cups fat-free milk
1-ounce package fat-free, sugar-free instant reduced-calorie vanilla pudding
8-ounce can pineapple tidbits in their own juice, drained
1 medium mango, diced
1/2 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
1 tablespoon sugar
16 fresh mint leaves (optional)
Arrange the banana slices evenly in each shell.
In a medium bowl, whisk together the milk and pudding mix for 2 minutes, or until smooth and thickened. Spoon over the banana slices. Cover with plastic wrap and refrigerate for 30 minutes, or until needed.
In another medium bowl, stir together the remaining ingredients except the mint leaves. Cover with plastic wrap and refrigerate for 30 minutes, or until needed.
Just before serving, use a slotted spoon to top each tart with the mango mixture. Garnish with the mint leaves.
