Ingredients.

1large whole chicken(4lbs)
1-2 pounds smoked sausage
1 large onion
2 pounds small zucchini
2 pounds yellow squash
2 bell pepper
6 stalks celery
2 jalapeņo(optional)
2 pounds cut okra
3 cans dices tomatoes
2 beers(optional)

salt to taste
pepper to taste
garlic(pinch
oregano1/8 cup
parsley1/8 cup
gumbo file(optional)--might be hard to find

Boil chicken until falling off the bone tender then remove from pot to cool and save chicken stock.
While chicken is cooling add
Sausage sliced thin
onion
bell pepper
celery
squash
zucchini
beer
tomatoes
jalapeno(optional
okra
Add in spices to taste:leave out the gumbo file for now.
Simmer ingredients until all the vegetables are extra tender(2 to 3 hours)
Make sure to keep the bottom stirred and enough liquid to cover ingredients. Leave enough room to add in deboned chicken meat at the end.

Add in chicken meat,re-season if needed, and simmer for another 30 minutes then add a sprinkle of gumbo file per bowl and serve.

Best served over rice...my favorite over wild rice



There is no need to make a "rue" or add a thickening agent to this gumbo because of all the ingredients it will be thick and hearty enough.
Feel free to try it your way though...Its really hard to mess this one up.
You will need a HUGE pot and this serves a small army. Too hard to cook just a small portion of this.
