Ingredients.
4 Hard-boiled Eggs, peeled and chopped
5 links Breakfast Sausage (about 3/4 cup), cooked and chopped
1/3 cup Light Mayonnaise
2 tablespoons Sweet White Onion (vidahlia is nice), finely minced
2 Celery Stalks (no end or leaves), finely chopped
1 tablespoon Parmesan Cheese, grated
1 teaspoon Lemon Juice (freshly squeezed if possible)
1/2 teaspoon Prepared Yellow Mustard
To taste: Salt & Freshly Ground Black Pepper (about 1/8 to 1/4 tsp of each)
Instructions:
In a medium bowl, mix the eggs, celery, onion, sausage, mayonnaise, parmesan cheese and lemon juice. Season to taste with salt & the ground black pepper.
Chill for one hour before serving to help the flavors combine.
