Egg Souffle Salad

Ingredients.

1 sml. pk lemon jelly
1 cup. hot water
1/2 cup. cold water
2 tbsp. vinegar
1/2 cup. mayonnaise
dash salt and pepper
3 diced cooked eggs
1/2 cup. chopped celery
1 tbsp. green pepper
1 tbsp. pimiento (optional)

Dissolve i small pk. lemon jelly in one cup hot water. Add 1/2 cup cold water, 2 tbsp. vinegar, 1/2 cup mayonnaise, salt and peeper. Blend well with egg beater. When partially set remove from fridge, and whip until fluffy. Fold in 3 diced cooked eggs,1/2 cup celery, 1tbsp green pepper, pimiento and chopped onion. This recipe works really well with a Tupperware mold.
