This is what i start with, i add more of some things and less of others. It's a great recipe to start with, and then add your own little things.
12 cups peeled and chopped tomatoes
9 cups chopped onions
1 cup chopped jalopenos
4 cloves minced garlic
2 cups chopped bell peppers
4 stalks chopped celery
1 tbsp sugar
1 cup vinegar
salt to taste
cook slow until water boils off, 1 to 2 hours
I like more tomatoes, more garlic, more jalopenos. For my hell fire batch, i will add some cayennes and habeneros. Also if you need to thicken more, add some corn starch, but be careful, add a little at a time.
You can either can it or freeze in freezer bags
