Ingredients.
1 can sweet corn
1 can creamed corn
1 pkg Jiffy Corn Muffin Mix
1 C sour cream
½ stick melted butter
1 or 2 eggs (one egg will be less fluffy, 2 will be more fluffy)
Options – I usually put a couple tablespoons finely mined onion, a bit of crushed garlic and a 1/8 t black pepper. The recipe is forgiving so add what you want.
Combine all ingredients and place in a greased casserole. Cook at 350 for 1 hr or until firm – do not over cook.
