Scalloped Corn..... 50 servings


Eggs 7oz or 4 med
Green pepper, chopped 4oz or 1cup
Pimiento, chopped 6oz or 1cup
Corn cream-style 15lbs or 7 1/2qts
Milk 1lb or 2cups
Salt 1oz or 2tbsp
Pepper ---- 1/2 tsp
Cracker crumbs 14oz or 1qt
Butter or Margarine 1lb or 2cups


1. Beat eggs slightly and add green pepper, pimientos, milk, salt pepper, and 1/2 lb melted butter or margarine. Mix well.

2. Add remaining 1/2 lb of butter or margarine to cracker crumbs.

3. Yield: About 21 1/2 pounds Place alternate layers of corn mixture and cracker crumbs ending with cracker crumbs in each of 2 greased pans (12x20x2in).

4. Bake at 350 F until crumbs are brown and mixture is set.
