1 lb. cod fillets, fresh or defrosted
1/2 cup. chopped onion
1/2 cup. thinly sliced celery
1/2 cup. thinly sliced carrots
1 clove garlic, minced
1 tbsp. vegetable oil
1- 4 oz. can mushroom stems and pieces with liquid
1- 8 oz. can water chestnuts, sliced and drained
1/2 cup. dry sherry
2 tbsp. soy sauce
1/2 tsp. pepper
1/4 tsp. ground ginger
1- 9 oz. pkg. frozen French style green beans
Cut cod into 1 inch pieces. Saute onion, celery, carrots and garlic in oil for 2 minutes. Stir in mushrooms with liquid, water chestnuts, sherry, soy sauce, pepper and ginger. Arrange cod atop vegetables. Bring to a boil. Cover and cook for 7 minutes. Add beans, cover and cook 6 minutes.Makes 4 servings.
