1 cup. long-grain rice
1/2 cup. corn oil
1/4 cup. vinegar
2 Tbsp. soya sauce
1/2 tsp. salt
1 (10-oz.) can mandarin oranges, drained
1 (10-oz.) can mushrooms, drained
1 cup. celery, sliced
2 Tbsp. green onion, chopped
1/2 cup. slivered almonds
Cook rice as per package dirctions. Spoon into large bowl. Combine oil, vinegar, soya sauce and salt. Pour over cooked rice. Mix well and chill for at least 1 hour to season.Just before serving fold in drained oranges, mushrooms, celery, green onion, and almonds. Spoon salad into lettuce lined salad bowl. Garnish with oranges and pimento.
