2 lb. fish fillets
1/2 tsp. salt
few grains pepper
2 tbsp. orange juice
2 tsp. grated orange rind
1 tbsp. melted butter or other fat
few grains nutmeg
Cur fillets in serving-size portions if desired. Place in a greased pan. Combine remaining ingredients and pour over fish bake in hot oven (450F.) for 10 minutes per inch thickness if fish is fresh or 20 minutes per inch thickness if fish is frozen.
Makes 8 servings - approximately 110 calories per serving.
