Ingredients.
12 oz boneless pork strips for stir-frying
1 cup chopped onion (1 large)
2 cloves garlic, minced
1 tablespoon cooking oil
4 cups chicken broth
1 cup thinly sliced carrots (2 medium)
1/4 teaspoon ground cumin
1.4 teaspoon crushed red pepper
1 14 1/2 oz can hominy, drained
3 tablespoons snipped fresh cilantro
1/4 cup shredded radishes
In a large saucepan cook pork, onion, and garlic in hot oil until pork is no longer pink. remove pork mixture from saucepan; set aside. Add chicken broth, carrots, cumin, and red pepper to saucepan. Bring to boil; reduce heat. Simmer, covered, for 7 to 9 minutes or until carrots are crisp-tender. Stir in pork mixture, hominy, and cilantro. Cook and stir until heated through. Top each serving with radishes.
