Ingredients.
1 cup Rigatoni
1 tbsp extra virgin olive oil
1 Large onion, chopped
2 cloves Garlic, chopped
2 stalks Celery, chopped
1cup carrots, chopped
4 cups Water
1 Medium potato, chopped
1 can (14.5 oz.) diced tomatoes
1 cup kidney beans
1 cup garbanzo beans
2/3 cup pasta sauce
2 to 3 tbsp soy sauce
Preparation
1. Cook pasta as package directs; drain, rinse & set aside.
2. Heat oil; saute onions and garlic. Add celery, carrots and water & bring to a simmer.
3. Add potatoes; simmer until veggies are tender, about 20 minutes.
4. Add tomatoes, beans, and pizza pasta sauce; heat.
5. Add soy sauce & pasta; cook 5 minutes.
