Ingredients.
8 lg baking potatoes
2 7oz. cans tuna (drained)
1 tbsp. grated onion
1 can cheddar cheese soup
1/4 tsp. paprika
1/4 tsp. salt (optional)
4 slices processed cheese
2 tbsp. butter or margarine
1 tbsp. parsley (chopped)
2 drops Tabasco sauce
Heat oven to 400 degrees. Scrub potatoes and rub skins all over with butter. Prick skin several times with fork. Bake 1 1/2 hours. Remove from oven and cool. Meanwhile, mix tuna, onion, chopped parsley, cheddar cheese soup, paprika, Tabasco sauce and salt. Using sharp knife, cut top of each potato lengthwise. Scoop out inside of potato and add to tuna mixture. Spoon tuna-potato mixture back into shell. Cut each slice of cheese in half and place one piece on top of each potato. Place stuffed potatoes in shallow dish and bake 15-20 minutes. Garnish with parsley sprigs (if desired). Serves 8.
