Ingredients.
1/2 cup. soft butter or margarine
1 tsp. salt
2 lbs. potatoes
1/8 tsp. pepper
Heat oven to 425 degrees. Grease heavy skillet (cast iron or one with heat resistant handle) with 3 tbsp. of butter. Peel and slice potatoes (about 5 cups). Arrange 1/3 of the potatoes in circular fashion around bottom and up the sides of skillet. Select slices that are uniform in size and shape.Dot with 1/3 of remaining butter, and repeat layering 2 more times. Place skilled over medium heat and cook (3mins.) to brown the bottom of the potatoes. remove and cover with foil. Place 9'' baking dish (Pyrex dish and foil and bake 5 minutes longer. Remove skillet from oven. Let stand 5 min. Gently loosen potatoes from sides and bottom. Invert into serving dish and un-mold potatoes. Serves 6.
