Baking Powder Biscuits------- 50 Biscuits
(with basic mix.)
Basic Mix--- 3Lbs, 12OZ OR 3 Quarts.
Milk--- 1Lb, 8 OZ OR 3 Cups.
(for drop biscuits use)
Milk---- 2Lbs Or 4 Cups.
(without basic mix)
Flour, All Pourpose--- 2Lbs, 8 OZ OR 2 1/2 Quarts.
Sugar--- 2 OZ OR 4 TBSP.
Baking Powder--- 2 OZ OR 1/3 CUP.
Salt--- 1/2 OZ OR 1 TBSP.
Shortening--- 1 Lbs OR 2 Cups.
Milk--- 1 Lb, 8 OZ OR 3 Cups.
1. Blend dry ingredients. add last quarter of milk cautiously, using only enough to make a soft dough that can be kneaded.
2. Knead Dough on lightly floured board, about 15 times. Divide in half. Roll to 1/2 inch thickness. cut with 2-inch cutter or into 2-inch squares with knife. place on baking sheet. brush tops with milk just before baking.
3. Bake at 450 degrees for 12 to 15 minutes. (Biscuits may be cut and held in refrigerator for as long as an hour before baking if desired.
