Bamboo Skewers
catfish fillets
Hickory smoke bacon-(don't use thick cut)
Garlic powder
Montreal Steak seasoning
Oil or pam spray
Grill
Soak bamboo skewers in water for at least 30 min.
Cut your catfish fillets into 1" chunks for the thick portions 1.5" for the thinner pieces. Cut bacon slices in half.
Wrap catfish chunks with the bacon and insert skewer so you pierce the overlap of the bacon slice.(Fold thinner pieces of fish in half) Season with garlic powder and montreal steak seasoning. Lightly oil or spray grill (but make sure grill is not on). Cook over med heat until fish is firm and bacon has (browned). you can use other fish with this also.
