I tried another way to eat sunfish fillets. I poached the fish until they were flaking apart. Then I cooled the meat. Added Mayo, shredded parmesan, black pepper, lemon pepper, and some Cajun seasoning. Mixed that all together and wrapped it in a tomato basil flour tortilla with some lettuce and pickle slices. It was good. Will be better next time when I use some mayo which is not fat free.
