4 oz. cream cheese
2 tsp. grated onion
1 tsp. lemon juice
1/2- 1 tsp. horseradish
1/8 tsp. salt
1/2 tsp. liquid smoke
7 1/2 oz. can red salmon
Mash ream cheese with onion and lemon juice. Add lesser amount of horseradish, adding more at the last, if desired.Mix in salt and liquid smoke.Drain salmon. Remove round bones and dark skin if any. Add and mix well. if needed, add a bit of red food coloring for appearance. Chill a few hours befor using. Serve with assorted crackers, toast pointsor toast cups. Makes about 1 1/2 cup.
Salmon Ball Double recipe. Shape into ball. Roll in finely chopped pecans or walnuts, about 1/2 cup. Top with parsley flakes. May also be rolled in a mixture of nuts and parsley.
Salmon log Roll into logs a bit smalller then round crackers. Slice and place on crackers.
